Valve Seals

It has been years since I have done valve seals on the car.

I have the air chuck to pump the cylinders and valve spring compressor. My question is do I replace the valve seals and add umbrella seals or just the valve seals?

My gold 72 burns some oil, more than I want it to, I feel it is because the engine sat for so long after it was built the seals dried out, I replaced the valve cover gaskets because they were dried out and oil pan gasket. My Bronze 72 doesn't burn any oil. Both are 350 2bbls
 
I only replaced the valve seals last time I did it. They had dried out and were crumbling when I was removing the old ones, so I kept a rag handy (around the oil return ports) and a shop vac to pick up the pieces that crumbled.
 
There is no harm in putting the O ring seals on with the umbrellas on top of them. I did that on the 454 in my hardtop
 
I see this is a month old but doesnt the top of the retainer need to be machined for umbrella seals?
 
I'm only gonna use Howard's valve seals (cutting style) since one of my heads already had the stems cut for the seals. I'm not going with any umbrellas. My springs are Howards.
 
There are seals that fit over the stock valve guides on a BBC but they were used for a different engine. I stumbled upon them at a machine shop by a guy the tipped me off to them. I want to say they were for some ford engine.
