How, exactly, does one do a 'body off restoration' on a car that is unibody? It is absolutely impossible.

Yeah, you take the subframes off. I mean, duh 🙂

A couple years ago he had a 4,000 mile 86 Hurst Olds Cutlass for sale ans he was asking $40k and thought he needed to ask $50k.

Umm, not the same as removing a body from a chassis. I think they need to change the wording.

I took the subframe off my 68 and had it powder coated way back in 1992. :)
That's a nice Z28, but they did make a lot of them. Prices seem to vary a lot.
