Thanx for that honesty Kevin. I've been involved in several friends or relatives that did exactly what you've done, they say the same thing. I'd feel the same way. If I ever do it, I'd build the oversize shop and park the rv inside, then either build the house or the living quarters within the shop. Now may be a great time to shop for an enclosed car trailer, to get a bit more space to organize.
I understand, 3 of you in a MH for months on end has to be tough. Even when traveling, 3 of us in a camper with 2 dogs gets to be a small place.

The couple down the street basically did the same thing you are doing. They lived in their camper for a good part of the summer until their Bardominium was built. Only difference is his parents live across the road from them so he did have a place to use as a shop. They are now in their home. Eventually they want to build a house on the property too. The already built a huge barn, it is the envy of the neighborhood.In the 3 steel shipping containers that are packed like sardine cans. We originally bought two 20' containers, then quickly realized we had so much more stuff and bought a third.
After the building is up and I dry it in (I install the residential windows and doors in the living quarters), then we can pull out all my tools into the shop area. The shop area is 30' x 54' (with four (4) 10' x 10' roll up doors, and a walk through door).
